Red bell pepper salsa....

I am always in for colorful food. Colors in vegetarian food means more vitamins and minerals and red bell peppers are no exceptions. Rich in Vitamns A , B6 , C , E , K and potassium, manganese, thiamine, riboflavin, niacin, folate, pantothenic acid and magnesium, they are a visual treat going down well with your system as well.

Once charred and made into a zesty red bell pepper salsa, the nourishment from the red bell peppers becomes even more enjoyable. We love this salsa warm or cold, as a dip or a side dish and even as a sandwich spread sometimes.

But we haven't really been eating much bell peppers because the husband has turned allergic to them. This charred bell pepper salsa worked like magic and he could eat it withous feeling any discomfort. Else he is highly intolerant to the aroma of bell peppers.

I had bought four of them when I spotted very fresh organic produce grown locally, thinking I will cook them for myself.

I grilled some over gas flame and made the salsa for my breakfast one day. 

Roasted a red bell pepper and a red ripe tomato over flame, till the skin of both the tomato and bell pepper is charred.

Peeled the skin and chopped both of them in chunks, dunked them both with 2 cloves of garlic, a small red shallot, 1/2 tsp of red chili flakes, salt to taste and a glug of olive oil, into my trusted chopper.

A good whiz into the chopper and a luscious red salsa ready to devour.

I had baked fresh whole wheat buns in the night so the breakfast for the husband was fried eggs sandwiched into warm buns. He could take a few spoonfuls of this salsa and that was a big relief for both of us The intolerance is not too bad that means.

I enjoyed my red bell pepper salsa with these warm buns without the  butter, more like paav bhaji but very different flavors...

This can be a nice side dish to any meal of your day or a bread spread if you think like me. This grilled red bell pepper salsa is high fiber and nutrition packed.

Simple food can be delicious and easy to rustle up. As I always say.

  2. sangeeta same pinch...me too made same 2 days back only with dosas but I use green mirchi + little bit of sauted onion too.....infact roasted shimla mirch looks so beautiful too pic also.....your buns are making me hungry & guess what yeasted dough is also rising but for pizza :( (i want buns)

    @ Spice ..i had also added a small red shallot to the salsa , raw shallot...have edited the text to add that ...thanks for reminding me that.
    With sauteed onion or even flame roasted onion too it will be yummy..
