veggie scrambled eggs with english style multigrain muffins



breakfast should be a colorful and hearty meal as it keeps you happy n energetic throughout the day............for me it needs to be quick too........all the morning hustle bustle leaves me with no time at all.......that is the reason i have modified many of my fav recipes into simpler versions.......this scrambled egg used to be my fav spanish omelette, with a few potato slices too..........now a days when i am pressed for time , i just scramble all the ingredients together.......the taste for me is almost similar.....potato slices gone n these healthy multigrain muffins come in as healthier options...........

to make it quick i keep the dough ready in the fridge............in the morning i just shape thes flat rounds with hands n microwave them for a minute each....then grill it on gas flame directly...........this is my shortcut method of doing it........sometimes i properly bake it in the grill option of my microwave which takes more time n is worth doing only when 8-10 muffins are being baked together............dough of the muffin is even simpler to make........i just mix the multigrain flour i use for my rotis with the leftover residue of the soya milk( which i make at home every 4-5 days) n make a soft dough........no fat or egg is used in this and the texture of the muffin comes from the fiber in it........it goes very well with this scrambled eggs.......i am making healthy daliya n multigrain breads these days n the recipes are on the way........soon to be seen here............



scrambled eggs or egg bhurji is mostly like the one i have already posted...........variations are always possible n it may depend on availability of veggies or simply on your mood...........................
this time i just heated a tsp of ghee ( my fav but any other oil can be used) in a pan.......chop green chillies,onions, zucchini  capsicum and tomatoes one by one( half a cup each) n go on dunking them into the pan.......goes in salt n pepper and one egg or two egg whites ....scramble lightly so that large chunks form.........or as you wish..........sometimes i finish it with mixed herbs.........serve immediately with the muffins........yummm........
