Stir fried shrimps in garlic butter or olive oil is the most favorite way to have them at my home. With some fresh seasonal herbs they are like a different world altogether. I stir fry the shrimps or prawns with various combinations of garlic and herbs. Sometimes with green garlic shoot puree or with coarsely chopped garlic cloves, herbs are mostly fresh seasonal ones. I love combining few green herbs and sweet Basil and fresh coriander greens is one such pairing that I love.
Garlic just makes it drink the elixir of flavors, no joking. This one will be your go to easy quick recipes with shrimps when you have to entertains guests or cook for a quick yummy meal for yourself.

(2 servings as a side dish)
large sized shrimps 250 gm
finely chopped garlic 1 tbsp
finely chopped coriander greens stems and leaves kept separately 2 tbsp+ 2 tbsp
finely chopped sweet basil 2 tbsp
red chilly powder or paprika or chilly flakes whatever you like quantity to taste, keep it lighter.
salt to taste
olive oil or butter to stir fry 1 tbsp

Clean and de-vein the shrimps if not buying the pre-cleaned shrimps. Keep aside.

Tip in the coriander greens, the stems part and red chilly powder and salt to taste and wait and stir for a second before adding the cleaned Shrimps into the pan. Sir fry turning them softly for a few minutes. Precisely a couple of minutes both sides as more cooking makes them rubbery.

Drain the Shrimps and arrange them into the serving plate. Add 1/2 cup of water to the remaining oil and tidbits of herbs into the pan, add the oats or barley flour and bring the pan to stove. Give it a quick boil and then pour the sauce over the shrimps.

This stir fried shrimp recipe is just the basics of a shrimp recipe that you can make your own, adjust the herbs and seasoning to your choice and have it with plain boiled rice and salad on the side or topped on a crusty bruschetta. It will deliver every single time I promise :-)
