apple cake..a whole wheat, whole fruit, spiced cake ...

Apple cakes of all sorts are very frequent in my kitchen. Using apple sauce and pumpkin or even carrots in my apple cakes is very common and i like my apple cakes spiced , almost like an apple pie but easier to assemble, easier to stock up and easier to slice and have it with my hot mug of milk for breakfast.

I was away for a while with my parents and in laws and the husband had to stay back alone. I made 2 loaves of this cake before leaving home so he would not miss his breakfast as he likes sweet breakfasts all the time. A warm, thick slice of this cake with hot or chilled milk is heaven. The husband likes lukewarm milk and my milk is either hot or chilled depending on weather. A couple of slices were left for me to try when i returned and i was tempted to download the pictures and write a post as soon as a had a warm slice of this loaf myself. The cake ages well thanks to the moisture imparted by freshly chopped apples added to the batter and the spice content.

Two loaves to last  at least a week...when you are 2 in the family :)


whole wheat flour (atta) 2 cups ( i used ashirvaad select atta)
vegetable oil 1 cup
sugar 3/4th cup
eggs 6
apples diced in small cubes 3 cups ( i used 2 very large apples, diced freshly after getting the batter ready)
one sliced apple (slice when required)
grapefruit marmalade 3 tbsp (you can used orange marmalade or apple sauce or any other jam you like)
freshly grated nutmeg 1/4 tsp
cinnamon powder 1 tsp ( Indian cinnamon)
dry ginger powder 1 tsp
red chilly powder (yes, the hot kind , you would love it) a generous pinch
salt a generous pinch
baking powder 2 tsp
baking soda 1 tsp
little chilled milk to adjust consistency if required


Mix the oil and the eggs in a wide bowl and whip together to make a smooth batter , add sugar and whisk to dissolve .

Mix the flour and spice powders, baking powder and baking soda and salt together .You can sieve them together 2 times to be sure of proper mixing. I use a fork as i am lazy.

Chop the apples in small cubes as they will be used in the batter now.

Mix the egg batter and flour, mix together and fold lightly with the help of a sturdy fork or a balloon whisk. Add the apple cubes and fold them into the batter. Add the marmalade bit by bit using a fork and fold it into the batter. The resulting batter looks like a lumpy thick goo like this.

Now line a baking tray or loaf tin with a buttered butter paper and spoon the batter into it . I needed a loaf dish and a small casserole dish for this recipe. You can chose your shape and size of the baking dish the way you want it. Baking time would differ with the size of the cake.

Now slice the remaining apple and arrange the slices over the batter. These slices get slightly browned and leathery and provide a nice texture to the crust. Preheat the oven in the meantime.

Bake the cake for about 45-50 minutes at 180C. Insert a skewer to test if the cake is done as a standard practice ....a gorgeous spiced apple cake has already filled your home with a warm aroma.

Hold the ends of butter paper and prop the cake out to let it cool down quickly. Cubes of apple are peeping out temptingly...while the slices have gone deeper into the cake.

Can you imagine what aroma wafts through this cake ... a simple act of mixing a batter with cut fruit and baking it till a golden brown hue can never be more satisfying.

The other cake in the casserole dish took 30 minutes to bake as it was a smaller cake.I laid the apple slices flat on the surface of this one ...see how the juices are oozing out...

I sliced the first loaf when it was still warm and the husband gobbled up 2 fat slices. One thin slice for me as i am not much a sweets person , i enjoy the flavors more than the sweetness and this one was bursting with flavors.

The cake is dense with whole wheat and due to so much fruit in it. Look at the mushed up apple bits .

There are some dark colored spots showing the marmalade would look for excuses to bake this cake again and again. As i do . Whole wheat, lots of apples with skin and less amount of fat used makes this cake good for people who are watching weight too. This is a lightly sweetened cake and most of the sweetness comes from the apples used in it , making it more flavorful so inducing greater satiety for weight watchers.

Some people would like to call it a bread but for me it is a cake any day. It was actually tasting like a Christmas fruit cake after 22 days in the refrigerator when i had it for breakfast yesterday...Some cakes age well as they say...

Full of fruit and bursting with winter flavors....I am sure going to bake this one many times this winter...
