low fat kadhai mushrooms

kadhai cooking is a purely Indian way of cooking where a mix of masalas is first stirfried into an iron skillet and then shallow fried veggies are added to the masala mixture, cooked for a while and then finished with a lot of butter, cream and dried kassori methi......this special finishing gives the dish a unique aroma and a mouthwatering taste....though this recipe is quite fatty can be prepared in a low fat version can keep the aroma of the recipe by doing the finishing right n keeping the 'frying the masala' part altered.............this way you get all the flavors of the curry and no butter and oil floating on top...........

these pictures are not clear as it was made for dinner n you must forgive me for being so callous with my more important factor is , when you want to enjoy a kadhai preparation........go for watery n negative calorie veggies , rather than paneer or chicken.........that may be for occasional eating........

button mushrooms 200 gms.
green capsicum 1 no.
chopped onions 1 cup
garlic paste 1 tbsp
ginger paste 1 tbsp
crushed coriander seeds 1 tsp
cumin seeds 1 tsp
coriander powder 1 tsp
cumin powder 1 tsp
black pepper powder 1 tsp
turmeric powder 1 tsp
crushed cinnamon n crushed green cardamom 1/2 tsp each
garam masala powder 2 tsp
red chilly powder 2 tsp
fresh tomato puree 1 cup
kasoori methi 3 tsp, crushed
light fresh cream 2 tbsp
oil 1 tsp
salt to taste


clean the mushrooms and cut them in quarters , cut capsicum into squares or stripes and keep aside.
heat 1 tsp oil in a kadhai ...throw in the crushed coriander seeds n cumin seeds n let splutter...throw in the chopped onions, lower the heat n add the salt......stirfry till onions are light brown...add the ginger n garlic paste and the powder masalas, mix properly and cook covered , stirring occasionally on low heat.........this is to fry the masala in less oil and to keep the aromas intact....water can be sprinkled in between stirring to prevent burning...when the masala gets aromatic, add the tomato puree and let it boil n cook for 4-5 add the mushrooms n capsicum...mix weel n cook covered for 2-3 minutes.........stir weel n add the kassori methi n cream...mix n take the kadhai off heat n keep the kadhai covered to get the kassori methi flavor seep into the whole dish......serve hot with naan or chapatis.
