beet root stirfry




last winters we had a lot of beet roots from our kitchen garden and i didn't want to waste the extra as it's so healthy.eating them raw in a salad is not a very good option cuz you can't eat more than 2 slices at a time,besides my husband didn't like it at all..................that was the time i devised this recipe to consume all the beetroots and get some antioxidants..........arvind liked it so much that i started using the leftovers to make parathas or grilled sandwitches....ha ha ha...........guests too liked it this way.



i even used the fresh leaves of beetroots as they have better nutritional value than the roots in other recipes.....which i will post later. actually the leaves have so much minerals, antioxidants, vitamins and fibre and no carbs like the roots ...........so not to be wasted at all.....those recipes will follow soon.





ingredients for beetroot stirfry
beet roots chopped into thick juliens-1 cup
shallots[green onions] chop the leaves only in 1 inch pieces-1 cup
soya nuggets boiled, drained and chopped like the above-1 cup
garlic cloves minced-10 nos.
green hot chilly sauce-1 tbsp or more
soy sauce-2 tbsp or more
sunflower oil-1 tbsp
black pepper powder 1 tsp
salt is not needed cuz sauces contain enough salt to season the dish

preparation
heat oil in the pan and put in the garlic mince....let it fry for a minute
put in the beetroots and stirfry for 2-3 minutes on high heat
now add the soya nuggets and sauces and pepper powder and cook covered for 4-5 minuts on medium heat....stirring once in between
it should not be overcooked and the beet roots be a bit crunchy
add the chopped greens of shallots......... tastes very good and store house of nutrition

serve hot with roti, paratha or any other kind of bread..................for a formal dining it is a good side dish.


i prefer this kind of light vegetable preparations for our daily meals but when some guests are visiting......... i cook those heavy stuff like butter paneer,butter chicken.....and the likes........at the same time i make sure that these light recipes are also served as side dishes so that i can get away without eating the heavier stuff.........moreover the guests also get this option.....works for me.


let me not forget this..............this season arvind himself bought beetroot seeds and made sure the maali sows them properly..........ha ha ha ha

expecting good yield this season too.
